Easiest way to answer this is saying that tags reset every year to placed on any expiring contract on your roster

Question about Carrasco. We drafted him at 2019: $9 and 2020: $9.5 (CO). He has since signed an extension. Do we now need to adjust our numbers to reflect his new contract for can we keep the old one?

You keep the contract from the time he was drafted, any changes (extensions, releases, etc) do not apply. The only time/s a players contract isn't set in stone when he is drafted is if the player does not have a contract either due to being a unrestricted free agent like Harper, or a player past his PP contract but still is arbitration eligible. With UFA players it's easy, they're only going to sign the one contract, so that's what you get, but for arbitration players, sometimes a player will agree to a one year deal, only to later announce an extension, in this case you would be tied to whichever contract the player signs first. Otherwise when you draft a player and post their contract information that is set in stone as there are players who are both PP eligible and have a real life contract, so when you draft a player it's also a declaration of which contract you have chosen for the player. Now some contracts have changed since the start of the draft and a choice is no longer an option, like Moustakas if he were drafted prior to his option being declined the drafting team had their choice of taking the option or his next real life contract, but once the option was declined by the Brewers the drafting team no longer had a choice of contracts and is now tied to whichever contract Moustakas signs this winter.

Question on buyouts: Do option years count as part of the calculation for buying out a contract, or can I treat it as a declined option year and thus no salary?
